Lion’s Mane Buffalo Bites
Instructions:
Heat a non-stick skillet on medium to medium-low heat. We use a well-seasoned cast iron skillet.
Place the whole head or a section of Lion’s Mane in the skillet and place another heavy skillet on top of the Lion’s Mane to press it into a steak. Add weight (brick, another skillet, canned good) to ensure the mushroom is sufficiently pressed. Dry saute the Lion’s Mane, and it will soon begin to express its liquid. Continue cooking, flipping the steak a few times. I removed the excess moisture and cooked a little longer until most of the liquid had been expressed and the steak was seared on both sides.
Remove from skilled and slice into bite-sized pieces.
In a bowl, mix olive oil and baking powder in a 2-to-1 ratio (I used 4 tablespoons of olive oil and 2 tablespoons of baking powder) and toss the mushroom bites to coat. Place mushrooms in the air fryer in a single layer and cook at 375 degrees for 12-15 minutes, flipping halfway through. Cook to desired crispiness and then toss in your favorite Buffalo sauce.
We served these over a bed of lettuce with homemade ranch dressing for lunch!
